I bake my steel cut oats with half water and half apple juice. Then I add a bit of coconut milk, some butter, and some apple pie spice. Maybe some nuts if I have them. The baked texture is not a risotto, but it’s far from pebbly. Adding fat makes it taste like a creamy, warm apple pie.
Your risotto recipe looks lovely though. Good to know as we’re all at home a lot lately.
