There is this pasta I love to eat — it’s grown in a collective of small family farms surrounding the Montebello Monastery in Marche Italy and because of this pasta, I’ve long suspected the very thing of which you write here.
The gluten-free trend is so typically western-minded of us. It’s a band-aid to the symptoms caused by a much larger root cause problem. I think your idea to treat it as a warning signal rather than a problem to be papered over is very wise.
